Cheese ripening process At the Gmunden site, a large variety of cheeses is processed. The cheeses go through a specific ripening process according to a predefined recipe for each cheese variety. This is done by storing the cheese in special cooling rooms with conditioned moisture and temperature levels. To obtain the correct treatment, the cheeses are treated at a smearing machine applying a specific product to the cheese after a certain number of days. The treatment is repeated according to the recipe of each cheese. After some time, the cheese is relocated to a second cooling room with a different controlled environment.
